France has several pleasures to reveal to its numerous visitors, and we would like to take a look at one of the most exciting projects in Paris this time of the year.
It is the ADMO, a true representation of Parisian haute cuisine. Here, chefs Albert Adria and Alain Ducasse have joined forces to offer an astonishing gastronomic journey at the top of the Quai Branly Museum, facing the Eiffel Tower.
It takes a touch of crazy creativity to replace the traditional Japanese udon with bacalao (cod) skin marinated in a mushroom broth topped with a Galician sea urchin tongue and a soft quail egg! Every item on the menu is equally audacious and inviting.
What is ADMO?
Chef Alain Ducasse created ADMO, a temporary restaurant in the Musée du Quai de Branly’s restaurant Les Ombres, in November 2021 after departing Plaza Athénée. For 100 days (ending in February), the chef will offer food that adheres to his devotion to nature, joined by Albert Adrià and Romain Meder.
Alain Ducasse is working on many projects… After a cookie factory, which he spoke highly about in July, the chef is back with a temporary restaurant.
Its name is ADMO, which stands for Adrià, Ducasse, Meder, and Ombres; the names of his two project collaborators, Albert Adrià and Romain Meder, as well as his own name and the museum’s restaurant, from whence the temporary table is delivered. Starting on November 10, the chefs have embarked on a 100-day experiment to produce a “high-cuisine offer” steeped in both Spanish and French traditions, and a passion for innovation.

This restaurant is described as a new approach to practice gastronomy and cuisine that adheres to Ducasse’s naturality idea, blending “cereals, vegetables, and fish from sustainable fishing.” Nature will take center stage, and the fundamentals will stay unchanged: “adapting to the new sustainable constraints, consciously choosing to lower fat and sugar incomes, preserving a direct link with the season.”
The Magnificent Location of The Quai Branly Museum
The restaurant is housed at the top of the Quai Branly Museum and this makes this exclusive experience more elegant.
The Quai Branly Museum, located near the Eiffel Tower and among the numerous tourist attractions of the 7th arrondissement, includes a great collection of indigenous art and other cultural artifacts from Asia, Africa, the Americas, and Oceania. It is the newest of Paris’ great museums, having opened in 2006. Approximately 125,000 people each month come to see the permanent collection as well as temporary exhibits on a range of topics.
Jean Nouvel opted to pay respect to the magnificent Iron Lady of Paris, who sits sentinel over the city only a short walk away while deciding on the most suitable architectural style for the new museum building. This breathtakingly unique design towers ten meters over an 18,000-square-meter landscape with 178 trees and a patchwork of woods, miniature hills, and lakes connected by meandering roads.
With the restaurant situated at the very top, visitors could enjoy this breathtaking view while feasting on some of the best meals available in Paris. If you are in Paris during this period, Découvertes highly recommends a visit to ADMO.
