Nord Pinus is a mythic institution in Arles where a long list of notables have left their mark: El Cordobes, Hemingway, Picasso, etc. The salons have been revived with respect and refinement: an ethnic safari look of unquestionable charm is ironically laid over the bevelled mirrors and 30's furniture. After a hazy slumber, the cuisine of this renowned place is beginning to wake up again. Beyond the classics - artichoke parmesan carpaccio or stuffed eggplant - the leaps to saffron cuttlefish, Antilles-style fish blaff, lemon-lamb tajine, or the ginger duck allow voyages to far-off places.
