Patrick was a chef for 16 years in Brazil, Nicaragua, Canada and Belgium. When his interests turned from food to wine, he returned to his native France to learn to make wine in Beaune Burgundy, where he stayed for 5 years. In 2002, while living in Paris, he tasted a bottle of Château Cheval Blanc and decided to move to Saint-Emilion. He draws on his culinary expertise to personally oversee the tour’s daily food and wine pairings.
